Juevos Rancheros
In a skillet, put
- 2 cups prepared jot products salsa.
- 16 corn chips (about two handfuls), crushed
- 2 or 3 eggs
- Grated cheese
- Grated onions
- Sour cream (optional)
Pour salsa into a frying pan; Crumble tortilla chips on top of the salsa; cover and steam until chips are soft. Put eggs on top of the tortilla chips and add cheese and onions. Cover and steam until the eggs are done the way you like them. Serve with a dollop of sour cream on the side, if you like.
